Czech Benefit BBQs in Texas — Growing up with a large Czech community in Texas, there were benefit BBQs just about every Sunday from Memorial Day to Labor Day. One week would be for the Catholic church, the next for the volunteer fire department, EMS… the list went on all summer. Long necks were arranged in pie-shaped wedges in huge livestock watering troughs Saturday and iced down for 24 hours. By Noon Sunday, the bottles were icy cold. Everybody got along with everybody else.
